National Climate Action Day

On Thursday, April 24, we come together to prove that if we all do a little, it can make a big difference. This happens under the title ‘National Climate Action Day’, initiated by Grønne Nabofællesskaber and marked by a wide range of companies, associations, and organizations. Together with you, we want to show that if enough of us make just small adjustments to our eating habits, we can create significant change.

On the day, your chef will serve a special minestrone soup packed with spring greens and Danish legumes incredibly tasty and extra climate-friendly.

    0.4 kg CO2e per serving. This aromatic vegetable soup from the Italian kitchen has a climate footprint that is ten times (!) lower than the classic beef lasagna. It is also packed with flavor from fennel seeds, rosemary, and sage. Serve the minestrone with toasted bread.

    Pasta with belugabolo

    Lentil-based bolognese is quickly becoming a new classic — and for good reason. Lentils have many of the qualities we appreciate in a traditional meat sauce, and with all the other flavorful ingredients and umami from the tomatoes, most people will not miss the meat in a good lentil bolognese. Beluga lentils are wonderful, but any firm variety will work — just avoid red lentils, as they cook down into a mush.

    Hash with beans, mushrooms, cabbage, and parmesan

    This dish is similar to hash, but with a few alternative ingredients that are lighter in nature and offer a wonderful, deep flavor. By browning the butter first, you achieve a lovely nutty aroma. Just like hash, you can use this dish to gather leftover cooked vegetables. Serve with bread and, if you like, a fried egg on top.
