A classic Italian dish of mussels baked with golden breadcrumbs, garlic, parsley and olive oil.

Gratinated mussels
Sådan gør du
Clean the mussels thoroughly, removing any beards.
Heat 1 tbsp olive oil in a large saucepan and add the garlic clove. Add the cleaned mussels and a little salt.
Cover and steam for about 5 minutes, just until the mussels open. Be careful not to overcook them.
Remove the mussels from the pan and leave to cool slightly. Discard any that remain closed.
Place the bread, chopped parsley, Parmesan and a drizzle of olive oil in a food processor. Pulse until you have coarse breadcrumbs, then season with salt and pepper.
Remove the top shell from each mussel and arrange them on a baking tray, shell-side down. Spoon the breadcrumb mixture over the mussels and drizzle with a little olive oil.
Bake in a preheated oven at 200°C for about 10 minutes, until the topping is golden and crispy.
To serve
Serve the mussels hot, warm or at room temperature – just not straight from the fridge.
Finish with a squeeze of lemon or a drizzle of mild chilli oil.
