Cook the beans in plenty of lightly salted water over a low heat for 1–1½ hours. You can add a halved onion and a few herb stalks to the cooking water for extra flavour. Start making the soup while the beans are cooking.
Peel and roughly chop the onions and garlic, then gently fry them in olive oil in a large saucepan for a couple of minutes.
Add the apple cider vinegar and white wine, and leave to reduce for 15 minutes.
Dice the celery and add it to the pan along with the peeled tomatoes, thyme and vegetable stock. Leave the soup to simmer for 30 minutes.
Add the cooked beans and 200 ml of their cooking water, then simmer for another 30 minutes.
Meanwhile, wash the three types of cabbage. Roughly slice the cavolo nero, tear the kale into bite-sized pieces and cut the Brussels sprouts into quarters or thin slices. Add all the greens to the soup and simmer for another 15 minutes. Season to taste with salt, pepper and a splash of apple cider vinegar.
To serve
Roughly chop the parsley and scatter it over the soup just before serving.
Serve with toasted bread rubbed with a halved garlic clove and sprinkled with sea salt.
