Fermentation is not something we add at the end. It is an integrated part of how we think about meals. When we ferment, we work with flavor over time, allowing us to create dishes with more layers and greater balance.
At the same time, it is a way of making better use of ingredients. Vegetables can be given new life, and seasonal abundance can be preserved and developed rather than wasted. It is both good kitchen sense and an important part of our approach to sustainability.
