Apple cake
A simple apple cake that can also be made with pears, rhubarb, or peaches.

Cut the butter into large pieces and leave it at room temperature for about 30 minutes to soften. While the butter is softening, gather and measure the remaining ingredients. Place the marzipan and sugar in a large mixing bowl.
Using your hands, work the marzipan and sugar together until well combined.
Knead the softened butter into the marzipan mixture until smooth and free of lumps.
Add half of the flour and half of the eggs, mixing until you have a smooth batter. Repeat with the remaining flour and eggs.
Line a baking tin with baking paper and spread the batter evenly into the tin. Core the apples, cut them into wedges, then halve each wedge.
Toss the apples with the cinnamon and cardamom. Arrange them over the batter, pressing them gently into the mixture. Bake in a fan oven at 200°C for 30 to 40 minutes, or until the cake is beautifully golden.
